Eden Grinshpan’s Sweet Potato Latkes
2 sweet potato grated, and squeezed in a cheese cloth
1 small onion, grated and squeezed in a cheese cloth
2 eggs, whisked well
2 teaspoons all-purpose flour
Salt and pepper to taste
sunflower oil to fry
Heat up a pan with oil about a 1/2 inch deep.
Place the grated sweet potato, onion, eggs, flour and salt and pepper in a bowl and mix together.
Fry the latkes on medium high 2-3 minutes on each side. Serve with apple sauce, sour cream, yogurt etc.
Serve with sour cream and pomegranate seeds
