Aaron Franklin’s Steak Tacos
Ingredients
<strong>Steak Taco</strong><br>
1- Bavette Steak - Any small steak will work fine!<br>
Salsa (see below or use your favorite)<br>
Flour Tortillas<br>
Avocado<br>
Grapeseed oil<br>
Kosher Salt<br>
Crunchy Finishing Salt<br>
Lime<br><br>
<strong>Salsa</strong><br>
2 Roma Tomatoes, Cored and Halved<br>
6 Garlic Cloves<br>
1/4 Small Onion<br>
Small bit of Cilantro (to taste)<br>
Limes (to taste)<br>
Kosher Salt (to taste)<br>
Directions
<strong>Salsa:</strong><br>
Char Tomatoes, Garlic and Onion<br>
Blend in food processor, add Cilantro leaves, Salt and Lime Juice to taste!<br>
Chill and double check Salt!<br><br>
<strong>Taco</strong><br>
Fire up grill for two zone setup or get a skillet pretty darn hot<br><br>
Remove steak from refrigerator, coat with grapeseed oil or other neutral oil and salt with kosher!<br><br>
Grill steak as hot as possible to get a nice crust on the outside without overcooking the inside. Be careful NOT to over do it! <br> <br>
Set Steak aside to rest<br><br>
While the steak rests, Slice the avocado, halve the lime and warm the tortilla on the grill.<br><br>
Slice the steak against the grain and place slices on the tortilla!<br>Top with sliced avocado, a spoon of salsa, squeeze of lime and a dash of crunchy salt and Enjoy!!!<br><br> You can add an egg for a super Austin style breakfast!
