In a sauté pan set to medium heat:
Pour olive oil into sauté pan.
Toss into pan; celery and carrots. Cook while occasionally stirring for 6-8 minutes.
Add onions, sautéing until translucent (no color but soft).
Add cubed bread to pan.
Stir To Evenly distribute all ingredients.
Place all ingredients into a casserole dish.
Bake in an oven at 350 degrees for approximately 45 minutes - 1 hour.
Using a ladle, add generous amounts of turkey stock during cooking process to create a bread pudding stuffing.
