Bread Pudding Stuffing at Portale


1-large, day-old, organic Pullman loaf bread form or cubed into ½ inch pieces

¼ cup sour dried cherries (that have been soaked in 1/2 cup warm water)

¼ cup finely diced celery

¼ cup finely dice yellow onion

¼ cup finely diced carrots

1 teaspoon olive oil


In a sauté pan set to medium heat: Pour olive oil into sauté pan. Toss into pan; celery and carrots. Cook while occasionally stirring for 6-8 minutes. Add onions, sautéing until translucent (no color but soft).

Add cubed bread to pan.

Stir To Evenly distribute all ingredients.

Place all ingredients into a casserole dish.

Bake in an oven at 350 degrees for approximately 45 minutes - 1 hour.

Using a ladle, add generous amounts of turkey stock during cooking process to create a bread pudding stuffing.
