Chef Tenney Flynn’s GW Fins Signature Biscuits

Ingredients

(MAKES 2 ½-3 DOZEN BISCUITS)

Vegetable oil spray
4 cups self-rising flour (I use White Lily)
3 ⁄4 cup lard
1 ⁄4 cup sugar
1 1 ⁄2 cups whole milk
Soft salted butter for serving

Directions

Heat oven to 400 degrees F. Spray a baking sheet with vegetable oil spray. Mix flour and lard together in a large bowl with a pastry blender (or fork) until the fat is worked in and the mixture is a coarse crumb consistency.

Add sugar and stir in milk to make a soft dough. Let rest for a few minutes. Drop using a small ice cream scoop onto prepared baking sheet.
Bake for 15 to 18 minutes, or until lightly browned.

Serve immediately with soft salted butter.
