Dr. Daryl Gioffre’s Chocolate Chia Pudding
Ingredients
(Serves 2)<br><br>
½ cup cashews<br>
2 cups coconut water (or filtered water)<br>
2 tbsp. cacao powder<br>
3 dates (pitted or take pits out)<br>
1/8 tsp. sea salt (Himalayan pink salt)<br>
1 tbsp. vanilla <br>
2 tbsp. coconut oil<br>
1 tsp. cinnamon<br>
Directions
Blend above on high till creamy, then add:<br><br>
6 tbsp. chia seeds<br><br>
Blend on low speed for 1 minute to keep chia intact, OR mix chia in with a spoon (gently stir), then set in refrigerator for 5 hours. Garnish with cacao nib shavings.<br><br>
