Cozy & Comfy Eats – Chrissy Teigen’s Spice-Rubbed Parmesan Chicken Breasts with Garlicky Sautéed Spinach


¼ cup olive oil, plus more for the baking sheet
6 cloves garlic, finely minced
1½ teaspoons paprika, plus more for sprinkling
1 teaspoon kosher salt
½ teaspoon finely ground black pepper
¼ teaspoon cayenne pepper
4 boneless, skinless chicken breasts (8 ounces each), patted dry
1½ cups finely grated Parmigiano-Reggiano cheese
Garlicky Sautéed Spinach (recipe follows), for serving

Preheat the oven to 400°F. Line a baking sheet with foil and grease the foil with olive oil.

In a small bowl, combine the ¼ cup oil, garlic, paprika, salt, black pepper, and cayenne and rub it all over the chicken. Arrange the chicken on the lined baked sheet. Sprinkle the Parm all over the chicken.

Bake until the cheese starts to turn golden and the chicken is just about finished, 15 to 17 minutes. Remove the chicken from the oven, crack up the broiler, and broil the chicken until the top is browned and sizzling, 3 to 4 minutes. Let rest for 5 minutes before serving. (Don’t forget to scrape up the crispy Parmesan cheese from the foil, unless it’s burnt black.) Sprinkle with paprika, and serve with garlicky sautéed spinach.
