Citarella’s Red Cabbage Slaw


Serves 4 to 6

This vinegar-based slaw cuts the fat of deep-fried foods, and is especially delicious served alongside Fried Flounder. You can personalize this very basic recipe with your own favorite flavors. Add a tablespoons of mustard, pickle juice, and/or mayonnaise to the dressing before tossing with the cabbage. You know me though—I like it just like this—nice and simple!

¼ cup white vinegar
1 tablespoon cane sugar
1 teaspoon sea salt
¼ cup extra-virgin olive oil
1 medium red cabbage (about 1 ¼ pounds), cored and very thinly sliced (about 6 cups)
Freshy ground pepper to taste


In a large bowl, combine the vinegar, sugar, and salt.
Whisk until the sugar and salt dissolves.
Add the olive oil and whisk until combined.
Put the cabbage in the bowl and toss until fully coated with the dressing.
Season with pepper to taste. Let stand for 30 minutes before serving.
