Citarella’s Sautéed Broccoli Rabe
A classic Italian side dish, broccoli rabe has a strong flavor—it’s almost an acquired taste. My wife and daughter didn’t eat it for years, but now they do, so don’t give up if your family doesn’t take to it on the first go. It’s a good complement to meaty Grilled Tuna Steaks
3 tablespoons extra-virgin olive oil
4 garlic cloves, finely chopped
1 bunch broccoli rabe, ends trimmed
Red pepper flakes to taste
In a large saucepan, heat the olive oil and garlic over medium heat, stirring the garlic until it just starts to turn golden, about 2 minutes.
Add the broccoli rabe and cover the pan. Cook for 4 to 5 minutes, or until the desired texture is achieved. I like mine al dente. If you like yours softer, cook a few minutes more.
Sprinkle with red pepper flakes and serve.
