Craig Eickmeyer’s Southwest Grilled Stuffed Gourmet Burgers


Serves: 4-6

2 Lbs lean Ground Beef

1/4 Cup Minced Red Onion

2 Tbs Garlic Powder

2 Tbs Fresh Thyme

2 Lg Eggs

4 Tbs Worcestershire Sauce

1/4 Cup Italian Breadcrumbs

1/4 Cup Shredded Colby-Jack Cheese

4-6 Bacon Slices

2 Jalapeños sliced

2 Tomatoes sliced

2 Avocados sliced

1/2 Cup BBQ Sauce

4-6 Brioche Buns


In a large bowl mix first 7 ingredients together until mixture has absorbed most of the liquids.

Reserve some of the mixture for capping the filling and set aside.

Form beef mixture into thick patties and press in the center of each patty to create a reservoir for the cheese.

Fill each patty with shredded cheese and cap with reserved beef. Seal edges and store in refrigerator for 1 hour to firm up.

Remove beef and grill to desired temperature.

Render bacon and set aside. Start assembling burger by placing stuffed patty on toasted Brioche bun.

Top patty with extra slice of cheese, BBQ Sauce, bacon, avocado, tomato and jalapeño.
