Dr. Mike Dow’s Greek Yogurt Pancakes with Bananas and Walnuts


Makes 3 servings

4 eggs
1 cup whole Greek yogurt
2 teaspoons stevia
2 teaspoons vanilla extract
6 tablespoons coconut flour
½ teaspoon baking soda
Pinch of cinnamon
1 banana slice
Handful of walnuts


Whisk all the ingredients until smooth, adding the banana slices and walnuts last.
The key to cooking these pancakes is being patient and using low to medium low heat.
