Gelman’s Guac


2 Serrano Peppers (with seeds)

2 Large Hass Avocados

2 Large Limes

1 Bunch Cilantro

2 Large Tomatoes

1 Large Sweet Vidalia Onion

Coarse Sea Salt

White Ribs = Hottest

Tips and Other Info:

•Serranos – 10,000-30,000 SHU (Scoville Heat Units)

•Jalapenos – 1,000-10,000 SHU

•Common Misconception = Seeds are the hottest

oReality = Ribs and Veins are the hottest – White is Hot

•Gloves while cutting peppers!

•Cutting Onion / Tomato Technique

•Avocado Amounts are Key


Step 1: Cut and scoop out avocados…mix up with a fork in a medium size bowl
Step 2: Chop and add a generous amount of tomatoes
Step 3: Chop and add onion
Step 4: Chop and add cilantro
Step 5: Chop and add Serrano peppers w/seeds (tip: use food prep gloves for handling hot peppers)
Step 6: Cut/squeeze and add lime to taste
Step 7: Add coarse sea salt to taste
Step 8: Serve and enjoy!
