Gelman’s Roasted Cauliflower

Ingredients

1 whole head of cauliflower cut into florets
½ cup avocado or vegetable oil
Salt
Pepper
One Garlic clove, minced
3 Fresh thyme springs, leaves removed (optional)
½ teaspoon nutmeg (optional)
¼ cup macadamia nuts, crushed
1/8 cup maple syrup
1 lemon

Directions

Preheat oven to broil setting

Place florets in a large bowl, add oil and toss to coat.

Season with salt and pepper.

Add garlic and thyme or a nutmeg and toss again.

Place cauliflower in a cast iron skillet.

Sprinkle with crushed nuts.

Place in middle of oven and broil 5 minutes but take care to watch it so it will not burn, this might take less time depending on the oven.

Once the cauliflower is nicely browned turn off the oven and leave closed for 20 mins.

After 20 mins remove from oven and top with the juice of one lemon and/or drizzle with maple syrup.

On indirect heat on a grill
In an air fry oven

Times will vary depending on your oven or grill but should be close to what is stated above
