Gelman’s Sautéed Green Beans Recipe

Ingredients

1 1/2 pounds trimmed fresh green beans-blanched
2 or more tablespoons olive oil
1 shallot chopped
2 cloves garlic crushed
¼ cup grated parmesan cheese
Juice from 1 lemon
Fresh sage and thyme
4 tablespoons butter
¼ cup toasted pine nuts*
1 cup French fried onions (optional; for finishing topping)

Directions

Blanche green beans in boiling water, then drain and quick chill with ice water
Drain beans again, and set aside
Heat olive oil in a sauté pan, add shallot cook about 2 minutes. Then, add garlic and continue to cook 1 more minute.
Add green beans, then sauté until desired doneness
Season with sage and thyme
Add butter to the sauté pan, and sprinkle with toasted pine nuts to finish
Serve
Option: use French fried onions in place of toasted pine nuts

*Toasted Pine Nuts:
Place the nuts in a dry skillet (don’t add oil!). Heat over medium heat for about 3 minutes, stirring until nuts are golden and fragrant, then remove from heat. Keep an eye on them - they can burn very easily.
