Gelman’s Sweet Potato Pancakes
2 medium sweet potatoes, peeled
2 carrot shredded
2 tart apples, peeled
½ cup finely chopped onion
4 tablespoons of Corn starch
1 teaspoon salt
1 teaspoon ground cinnamon
Pinch freshly ground pepper
2 eggs, lightly beaten
Canola oil for frying
Shred the apple, sweet potato, carrot and onion. Mix in a bowl.
*(If there is extra liquid, let the mixture sit on paper towel to drain liquid before frying)
Toss with corn starch, salt, cinnamon, pepper
Whip the eggs and add them to the mixture.
Divide into 2 inch pancakes and fry on med heat for 4 min.
