Ginger Juniper Marinade at Portale


3 cups thinly sliced shallot or red onion

1 large head garlic peeled and thinly sliced

5 oz piece of ginger thinly sliced

¼ cup crushed juniper berries

2 Tb ground pepper

½ cup each coarsely chopped rosemary and thyme

¼ cup olive oil


Rub turkey parts with oil.

In a bowl combine marinade ingredients.

Cover turkey on both sides with marinade.

Cover and refrigerate 12 to 24 hours.

Brush off marinade and allow turkey to sit at room temperature 2 hours before roasting.
