Healthy Breakfast Pizza

Ingredients

CRUST
-1 pkg. Bob’s Red Mill GF Pizza Crust

SAUCE
-1 sweet onion chopped
-4 cloves garlic chopped
-2tb. Olive oil
-3 sprigs thyme picked and chopped
-3 scallions chopped
-1c. Almond milk or coconut milk

TOPPINGS:
-1 quail egg – cut top open with a paring knife gently and place egg in a tiny bowl until ready to use.
-1/2 sweet onion, chopped fine
-1 leak (white part only), chopped fine
-2tb. Olive oil
-2 cloves garlic, finely minced
-1/2 bunch/box chives, chopped fine
-6 sprigs thyme, removes leaves, discard stems and chop fine
-salt and pepper to taste

Directions

SAUCE INSTRUCTIONS:
Heat your favorite sauce pot and add the olive oil, then add the rest of the ingredients and sweat until cooked through and translucent.
Add almond milk and turn the heat down a little. Allow the almond milk to simmer for 2-3 minutes.
Turn off heat and allow to cool slightly then pour the ingredients into a blender, blend until creamy. Reserve to the side until you are ready to make your pizza.

TOPPING INSTRUCTIONS:
Heat your favorite skillet to medium heat and add one tablespoon of olive oil. Add the onion, leak and garlic and cook until it start to get a little crispy around the edges, 2-3 minutes. Ass the mushrooms and let the water cook out and start to get crispy. Remove from the teat and toss in your finely chopped chives and thyme. Salt and pepper to taste. Hold until you’re ready to put together your pizza.

PIZZA TIME
-Oven pre heated to 475 or use your Breville Home Pizza Maker on “thin setting”
INSTRUCTIONS:
To assemble your pizza take your crust and roll to your desired thickness. Be sure you use lots of extra gluten free flour to roll out crust, the dough can be a little sticky. Put your dough in the oven and pre-cook for about 8 mins. You don’t want to cook it all the way, but you want to pre-cook it a little bit to get that crispy perfect bottom. Remove the crust and spread and spread your sauce on. Then add your toppings and place your quail egg into the middle of the pie. Place back in the oven and bake until the egg is just set in the middle [or until cooked thru if you prefer a cooked yolk].
Remove, cut, and enjoy!
