Heavenly White and Pear Iced Tea
6 bags of white tea
6 cups water
2-3 pears, washed and dice into ~1/2 chunks (or 1 cup pear nectar)
4-5 whole cloves
2 Tbsp honey or to taste (riper pears are sweeter and no honey necessary if using pear nectar)
Sprigs of mint to garnish (optional)
In a pan, add water, cloves, and diced pears* over medium heat and bring to a boil. Lower heat to low-medium and after 5 minutes, add the white tea bags. Let cook for 20-25 minutes, removing the white tea bags after 5 minutes** brewing time. Stir in honey (optional) before straining. Strain tea through a metal mesh strainer after cooking to remove pears and cloves. Use a wooden spoon to press the softened pears to extract more juice into your tea. (You can eat the pears if you like.) Transfer into a pitcher and serve over ice, with an optional sprig of mint.
*If using pear nectar (juice), add it after the tea bags have brewed and been removed and continue cooking for about 20 minutes in integrate the flavors.
** Some white teas become more bitter with longer brewing times, but there is nothing wrong with leaving the tea bags longer if you enjoy the flavor. The shorter brew time yields a more subtle, but still potent white tea flavor.
