Josh Capon’s Turkey Tacos
1 lb. leftover turkey leg meat
Leftover turkey gravy
2 shallots, small dice
1 jalapeno, diced
1 8 oz. can cranberry sauce
1 pkg. hard taco shells
Remove turkey meat from bones, and dice in 3/4 " squares.
Heat diced turkey up in leftover turkey gravy and set aside for plating.
In small sauce pot, sweat diced shallot and diced jalapeno over medium-low heat for 10-15 minutes, until shallots become translucent.
Fold in cranberry sauce. Season to taste.
Spoon turkey meat into taco shells and top with a dollop of cranberry salsa.
