L’Artusi’s Spaghetti with Garlic, Chilis, and Parmesan


Serves one.

3oz dried spaghetti

3T butter

2T extra virgin olive oil

1T thinly sliced garlic

3oz parmigiano brodo (Simmered parmesan rind with chicken stock)

Salt to taste

Crushed red pepper to taste

1ts minced chives

.5oz grated Parmigiano


Cook spaghetti in salted, boiling water according to package directions.

Add 2T butter and 1T Extra Virgin Olive Oil to a pan with sliced garlic. Cook over medium heat until garlic starts to turn a light golden brown.

Add crushed red pepper, followed by the parmigiano brodo. Cook over low heat until sauce starts to reduce and ingredients start to form a light sauce.

Add cooked pasta and 1oz of pasta cooking water to the saucepan, along with chives, remaining 1T of butter and extra virgin olive oil. Toss to marry sauce with pasta. Plate and enjoy!
