Laurie’s Banana Bread


All ingredients should be room temperature.
  • 5 or 6 black bananas - they should be so ripe they are almost like liquid.
  • 1/2 cup flax meal
  • 1/2 cup garbanzo flour
  • 1/2 cup almond flour
  • 1/2 cup soy flour
  • 2 eggs
  • 1/2 cup coconut oil
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tbsp vanilla extract
  • 1 tsp salt
  • 1/2 cup walnuts (optional)


Pre heat oven to 350 degrees.

Combine dry ingredients (except walnuts)

Combine wet ingredients

Combine all ingredients together vigorously with a rubber spatula. Add walnuts if desired.
Lightly grease a Pyrex loaf pan.

Pour batter into pan. If you are including walnuts, sprinkle walnut dust on top.

Bake for one hour or until it passes the tooth pick test.
