Maria Loi’s Lavraki Psito – Grilled Branzino
2 branzino, butterflied
Olive oil, as needed
1 lemon, sliced
Salt and pepper, to taste
Dry wild Greek oregano, to taste
1. Drizzle the olive oil over the skin of both fish.
2. Season the inside of each fish with salt, pepper, and oregano to taste.
3. Place a few lemon slices inside each fish.
4. Grill the fish about five minutes per side, until the skin is crisp and the flesh is opaque.
5. Serve with lemon wedges, and enjoy!
