Melba’s Grilled Cajun Salmon
Ingredients
4 (6-oz.) skin-on salmon fillets <br><br>
1-2 tablespoons olive oil<br><br>
1/4 cup Cajun seasoning (combine Paprika; Cayenne pepper; Garlic powder; Onion powder; Black pepper; White pepper; Dried oregano; Dried basil; Dried thyme)<br><br>
1 tablespoon chopped fresh flat-leaf parsley (for garnish)<br><br>
Preheat grill (400°F to 450°F) or stove top Griddle to med-high heat. <br><br>
Brush salmon fillets evenly with 1 tablespoon of the oil; sprinkle with your Cajun seasoning.<br><br>
Place salmon on oiled grates; grill, covered, until slightly charred, about 4 minutes per side.
Transfer to a platter & serve.<br><br>
