Melba’s Grilled Cajun Salmon

Ingredients

4 (6-oz.) skin-on salmon fillets

1-2 tablespoons olive oil

1/4 cup Cajun seasoning (combine Paprika; Cayenne pepper; Garlic powder; Onion powder; Black pepper; White pepper; Dried oregano; Dried basil; Dried thyme)

1 tablespoon chopped fresh flat-leaf parsley (for garnish)

Preheat grill (400°F to 450°F) or stove top Griddle to med-high heat.

Brush salmon fillets evenly with 1 tablespoon of the oil; sprinkle with your Cajun seasoning.

Place salmon on oiled grates; grill, covered, until slightly charred, about 4 minutes per side. Transfer to a platter & serve.
