Melon soup (Honeydew or Cantaloupe)
2 cups ripe honeydews, cut into small balls
1 Tbsp lime juice
1 Tbsp honey
1/2 cup plain yogurt
1⁄4 cup honeydew balls (to garnish)
Fresh mint leaves (optional garnish)
1. In a food processor or strong blender, combine honeydew, lime juice, and honey. Blend until evenly mixed and smooth.
2. Transfer into a bowl and whisk in yogurt until well incorporated. (You can do this in the food processor by pulsing, too)
3. Chill in the refrigerator for an hour or longer.
4. To serve: Whisk briefly and serve cold. Garnish with melon balls and fresh mint (optional)
