Mia Rossi’s Holiday Snowball Bites
14 oz package of chocolate sandwich cookies
8 oz cream cheese soften to room temperature (or replace with 4 oz peanut butter)
12 oz white chocolate chips
12 oz milk chocolate chips
-Crushed Candy Canes
-You can also drizzle the opposite color melted chocolates onto them (so drizzle the white chocolate on the ones completely covered in white chocolate and vice versa)
-Peanut butter is Mia’s absolute favorite food and her favorite combo is peanut butter and chocolate sandwich cookies, so you can replace 4 oz of cream cheese with 4 oz of peanut butter
Put chocolate sandwich cookies into a plastic bag and crush with a rolling pin
Once all cookies are finely crushed, put some aside to use as toppings
Mix the crushed chocolate sandwich cookies and the block of cream cheese in a bowl until it is one mixture
Using an ice cream scooper or a spoon, form the mixture into several small balls and place on a parchment lined baking sheet
If the balls seem too soft to handle…place them in the fridge for 15-30 minutes until firm
Melt chocolate separately, in a microwave/microwave safe bowl…30 seconds at a time…stirring until completely melted.
Once your chocolate sandwich cookie balls are chilled, roll them in the melted chocolate and sprinkle your toppings on while the chocolate is still melted so that the toppings will stick. Place them on your parchment-lined baking sheet and put back in the fridge to chill…Enjoy!
