Michael Symon’s Caramelized Onion and Blue Cheese Stuffed Burger
Kosher salt and freshly ground black pepper
1 1/2 pounds ground beef, divided into 8 balls
1 large yellow onion, diced
1 c Crumbled blue cheese
Your favorite mayo for serving
Your favorite mustard for serving
2 c arugula
4 soft potato rolls, toasted
Heat a charcoal grill with a hot and a cool side by building the coals on one side only.
For the caramelized onions: Place a medium sauté pan over medium heat or over the hot side of the grill. Add 2T of olive oil followed by the onions. Season with salt and pepper then cook, stirring occasionally until the onions are tender and deeply caramelized, 10-12 minutes. Set aside to cool.
Flatten all 8 balls of beef into thin patties between 2 sheets of wax paper.
Mix together the caramelized onions and blue cheese.
To 4 patties add the caramelized onions and blue cheese mixture to the center then top with the remaining patties and seal the edges.
Season both sides with salt and pepper and drizzle with olive oil. Place on the grill to char on both sides and cook to desired temperature.
Spread the toasted potato rolls with your favorite mayo and mustard then add a burger to each. Add a handful of arugula to the top then place the top bun on. Serve.
