My Healthy Dish’s Asian cold noodle side salad

Ingredients

1/2 head purple cabbage (shredded)

2 cups carrots (julienned)

1 cup red bell peppers (sliced)

1 cup sliced cucumbers

1/2 cup mint

3 cups soba noodles (cooked)

2 Tbsp. slivered almonds

1 Tbsp. sesame seeds

Directions

Mix all ingredients. For dressing, add juice from 1 Orange to leftover salmon marinade, and mix.
