Ryan’s Spinach Quiche
One pie crust
1 tablespoon olive oil
4 cups baby spinach – one 6 oz. bag- lightly chopped
½ cup yellow onion, diced
1 ½ cups half-and-half
1 tablespoons AP flour
4 large eggs
1 teaspoon salt
Freshly ground black pepper
1 cup grated cheddar or Gruyere
Crunchy onion rings
Green Tabasco sauce
Pre heat oven 325 degrees
Oil or butter pie plate and line the plate with the pie crust, crimp and set aside.
In sauté pan heat oil then add onion cooking over medium heat until soft then add chopped spinach and stir until wilted. Take off stove to cool. Do not overcook the spinach.
In a large bowl whisk half and half with the flour then add eggs and whisk until combined.
Season with salt and pepper.
In the pie crust lined pie pan, layer sautéed spinach and cheese, then pour egg mixture over the top carefully put in oven and Bake for 55 – 60 mins until golden and set.
Top with crunchy onion rings and green tabasco sauce.
