Seacrest Family Sweet Potato Casserole
Ingredients
3 sweet potatoes- roasted, peeled and slightly cooled <br>
4 tablespoons butter melted <br>
½ cup milk <br>
¼ cup maple syrup <br>
½ teaspoon salt <br>
2 large eggs slightly whisked <br>
½ cup pecans or walnuts <br>
3 cups mini marshmallows <br>
1 tablespoon butter for casserole dish
Directions
Preheat oven 350 <br> <br>
1) *Roast Sweet Potatoes: 350 degrees on a sheet pan for 35 -45 min (until fork tender) <br>
When cool score the skin and remove both ends for easy peeling peel <br> <br>
2) Start mashing slightly cooled roasted potatoes. Add butter, milk, maple syrup, and salt and mash until smooth <br> <br>
3) Add eggs and fold into mixture <br> <br>
4) Transfer mixture to a buttered casserole dish <br> <br>
5) Top with nuts then marshmallows can also add granola, and/or roasted pumpkin seeds. <br> <br>
Bake in oven for about 30 minutes or until golden brown. <br> <br>
*TIP: You can boil the sweet potatoes but roasting the sweet potatoes gives them a naturally sweeter and more intense flavor
