Seacrest Family Sweet Potato Casserole


3 sweet potatoes- roasted, peeled and slightly cooled
4 tablespoons butter melted
½ cup milk
¼ cup maple syrup
½ teaspoon salt
2 large eggs slightly whisked
½ cup pecans or walnuts
3 cups mini marshmallows
1 tablespoon butter for casserole dish


Preheat oven 350

1) *Roast Sweet Potatoes: 350 degrees on a sheet pan for 35 -45 min (until fork tender)
When cool score the skin and remove both ends for easy peeling peel

2) Start mashing slightly cooled roasted potatoes. Add butter, milk, maple syrup, and salt and mash until smooth

3) Add eggs and fold into mixture

4) Transfer mixture to a buttered casserole dish

5) Top with nuts then marshmallows can also add granola, and/or roasted pumpkin seeds.

Bake in oven for about 30 minutes or until golden brown.

*TIP: You can boil the sweet potatoes but roasting the sweet potatoes gives them a naturally sweeter and more intense flavor
