Tara Royer Steele’s Junkberry Pie
Ingredients
1 granny smith apple, peeled and cored, and sliced into 8th’s<br>
1 cup fresh blueberries<br>
1/2 cup fresh raspberries<br>
1 cup fresh strawberries<br>
1 ½ cups fresh peaches<br>
1 cup fresh blackberries<br>
¾ cup sugar<br>
½ cup flour<br><br>
<strong>Junkberry Topping:</strong><br>
½ cup of sour cream<br>
¼ tsp salt<br>
½ cup of flour<br>
2/3 cup of sugar, plus extra for sprinkling
Directions
Combine strawberries and peaches first in large saute pan, cook down for a few minutes, add remaining fruit and sugar and cook until sugar begins to form a syrup, add in flour. Stir until all combined, add to pie shell. Fruit does not have to be completely cooked because it will bake in the oven!<br><br>
<strong>Junkberry topping:</strong><br>
Combine ingredients together, spread evenly over fruit filling and sprinkle with sugar.<br>
Bake 325 for 45 minutes…let cool before cutting! Top with vanilla ice cream.
