Thai Marinated Grilled Skirt Steak with Green Papaya Slaw

Ingredients

GRILLED SKIRT STEAK

3 lbs thin rolled-out skirt steak marinated overnight with the following:

2 tablespoons tamarind paste

1 tablespoon soy sauce

1 teaspoon sriracha

Pinch white pepper

1/3 cup brown sugar

1 table spoon puree ginger

1 table spoon puree garlic

1/4 cup mirin

Juice of 2 limes





SATAY SAUCE

1 cup coconut milk

1/2 cup peanut butter

1 tablespoon brown sugar

1 tablespoon puree garlic





GREEN PAPAYA SLAW

2 green papaya

1 container of grape tomato (about 2 cups)

5 tablespoons fresh lime juice

3 tablespoons brown sugar

2 tablespoons & 2 teaspoons fish sauce

1 table spoon puree garlic

1 table spoon puree ginger

10 large cherry tomatoes, halved

1 serrano chili, minced

2 tablespoons salted roasted peanuts, chopped

Directions

Take marinated meat out of bag and place on grill.

Cook meat as desired.

Combine satay sauce ingredients in pot.

Put satay sauce pot on grill and reduce.

Next, julianne or shred 2 green papaya.

Cut grape tomatoes in half.

Plate slaw.

Cut meat in strips.

Lay meat over papaya slaw.

Drizzle satay sauce over meat.

Garnish with roasted peanuts, cilantro and grilled lime slices.
