The Domestic Geek, Sara Lynn Cauchon’s Vanilla Cupcakes
1½ cups cake flour
1 tsp baking powder
½ tsp salt
½ cup butter, room temperature
1 cup sugar
¾ cup milk
1 tsp vanilla extract
Preheat the oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In the bowl of a stand mixer, combine the butter and sugar. Beat until it is light and fluffy. Add the milk, eggs, and vanilla extract and beat until the mixture is well combined. Add the dry ingredients and mix until a batter forms.
Using an ice cream scoop, scoop the batter into each liner filling it just over halfway full.
Bake between 18 to 20 minutes or until a toothpick inserted into the center of each cupcake comes out clean.
Allow the cupcakes to cool completely before decorating them.
