Tim Mittan’s Grilled Garlic Shrimp with Spicy Orange Sauce
The Garlic Shrimp:
1 lb of Medium to Large Shrimp – Thawed, Shelled and Deveined
6 to 8 cloves of garlic – minced
¼ cup Olive Oil
½ tsp Salt
¼ tsp Oregano
Fresh ground Pepper 6 to 8 wooden Skewers – soaked in water
Pat the shrimp dry then in a large ziplock bag.
Add in garlic, seasoned salt and pepper & olive oil. Let marinate for 30 min. It does not have to go very long because shrimp are like little sponges and soak up flavor.
Put 4 or 5 shrimp on each skewer, making sure to run the skewer through both the head and tail of each shrimp. Leave a small space between shrimp so they cook evenly.
Place skewers on a hot grill. Cook no more than 3 to 5 min on each side or until they are pink and have started to curl. (a little more if you like them REALLY done)
The Spicy Orange Sauce:
Before you put the shrimp on the grill, you will want to start the dipping sauce
1 small jar orange marmalade
¼ cup orange juice
Juice from 1 lime – you can cut the lime in half and grill it for a few minutes to help release the juices
1 T minced ginger
1/2 to 1 tsp red pepper flakes (more or less depending on your “heat” tolerance)
