Tom Colicchio’s Pasta in a Pot


1lb dry pasta - rigatoni or orecchiette
3/4 bunch broccoli rabe (grocery store variety) - coarsely chopped
Black pepper to taste (about 2 tablespoons)
Salt to taste
1/4 cup olive oil
1/3 cup Parmesan cheese
Red pepper flakes to taste


Boil a pot of salted water.

When the water is boiling, add in dry rigatoni or orecchiette. Cook pasta for 4 minutes and then add uncooked, chopped broccoli rabe to boiling water and pasta. When the pasta is al dente or ready, strain the whole pot. Transfer to a large bowl. Add black pepper, salt, red pepper flakes, grated Parmesan cheese and olive oil. Enjoy!
