Wendy Bazilian’s Crockpot Steel Cut Oatmeal

Prep Time: 10-15 minutes
Cook Time: 7-8 hours (e.g. overnight)

2 cups steel cut oats (About 4-5 to 1 ratio of liquid to oats)
1/2 cup dried cherries
1/2 cup dates, chopped
8 cups water (can be made with 9 1/2ish cups water, no milk, too)
1 cup low fat milk (almond, low fat coconut, soy)
Generous 1/4 cup honey, plus extra honey when serving, to taste
1 teaspoon vanilla
4-5 cinnamon sticks (or 1-2 teaspoons ground cinnamon)
Cooking spray or butter (to oil the slow cooker before adding ingredients)


Spray inside of slow cooker (crockpot) with nonstick cooking spray or rub lightly with butter. Into the slow cooker, combine all ingredients except honey in the slow cooker, cover and cook on low for 7 to 8 hours. You can wait to add the milk and honey after cooking, too, just before serving. Add some nuts and additional milk (or alternatives) to taste.

*Note: Be creative with dried and fresh seasonal fruits and various nuts and fixins. And you can add a few chopped apples in the crockpot with the oatmeal for a delicious apple cobbler-style oatmeal!

•Dates, Coconut, Pecans

•Dried apricots and almonds

•Raisins and pumpkin seeds

•Apples (fresh and cut; cooked into the oatmeal)—like an apple cobbler oatmeal

•Add-ins: seasonings like cinnamon, pumpkin pie spice, nutmeg, ginger (dried, crystalized or peeled, large fresh chunks (remove later), pure vanilla extract, chopped fruit (dried or fresh), or some natural sweetener like maple syrup, agave or honey.
