Wendy Bazilian’s Fruit Pizza


Recipe per 1 pizza:

1 (10-inch) whole wheat flour tortilla

Spray oil

3 teaspoons sugar, divided (1 tsp+2 tsp)

1/4+1/4 teaspoon ground cinnamon

1/4 cup whipped low fat, cream cheese

1/4 cup lowfat Greek yogurt

1/2 cup fresh blueberries

1/4 cup green grapes, halved lengthwise

1/4 cup mandarin oranges (canned ok, drained)


Preheat oven to 400°F, Place tortilla on an ungreased baking sheet, spritz/brush with canola or grapeseed oil

In a cup, combine 1 teaspoon of the sugar and the 1/4 teaspoon cinnamon, sprinkle evenly over the tortilla

Bake tortilla until edges just begin to brown, 3 to 4 minutes

ALTERNATE method: toasting in large toaster oven – toast tortilla in toaster oven on a tray

Remove to a serving plate

In a small bowl, combine the remaining 2 teaspoons sugar and 1/4 teaspoon cinnamon with the cream cheese, spread evenly over the crisp tortilla
Arrange blueberries and other fruits on top
Cut in 4 wedges (fun and easy with kitchen scissors) and serve
